Mayonnaise

1 egg yolk
2 1/2 teaspoons lemon juice
1 teaspoon water
3/8 teaspoon salt
3/8 teaspoon granulated sugar
1 cup vegetable oil

Combine the vinegar, water, salt, sugar, and lemon juice in your blender and turn blender on slow slow speed; drop egg through top opening while blending.

Pour the oil in a slow stream into top of blender while blending. Your mayonnaise should be thick and off-white in color when it's done. Whisk any remaining oil into the mayonnaise and transfer the mayonnaise into an old mayonnaise jar and seal it with a lid. Keep up to 2 weeks in your refrigerator.

Makes 1 cup.

I use my Vita Mix to make the mayonnaise. You can substitute apple cider vinegar for part of the lemon juice. In a pinch you can use all vinegar.
