Last night we had Shannon's nurse, Terri, over for a late birthday dinner because she has been so nice. We had:
Oven-fried Salmon (See Oven-fried fish (March 6, 2009 post)
Potatoes baked in the microwave
Acorn Squash:
Wash squash, pierce with knife in two places, and place in the microwave oven on high for 4 minutes, rotate and check for softness, it will usually take another 4 minutes until it is soft/pliable. When cool enough to handle, cut in half and scoop out seeds and discard them, scrape pulp into bowl. You will be left with just a thin shell to discard. Mash with fork and season with salt, pepper, and butter or margarine. If you are a Weight Watcher you can use one of the spray butter flavorings.
For dessert we had White Chocolate Ambrosia (September 24, 2008 post). This dinner was well received by Terri and Shannon and we have leftovers for another night.
