This recipe was given to me by my daughter-in-law Glenda and it is absolutely delicious.
Pickling Pig Cake
1 box yellow butter cake mix
4 eggs
1 can mandarin oranges, drained and chopped (reserve juice for frosting)
1/4 cup oil
1/2 cup coconut
Preheat oven to 350. Grease and flour Pyrex cake pan. Add all ingredients to cake mix. Mix well with electric mixer. Pour into pan and cook for 45 minutes. Cool and ice with frosting.
Frosting
1 (8 oz) cool whip
1 small instant vanilla pudding mix
1 large can crushed pineapple drained well
1/4 cup coconut
Mix all except coconut together with the juice from mandarin oranges. Beat well and put in to the refrigerator till set. Frost cake and top with coconut. Put into refrigerator over night before serving.
